One Pot Cheesy Chicken Broccoli and Rice Casserole

I just made this dish and it has a fantastic flavor! I used a brown basmati rice which normally takes 45 minutes to cook, so that is how long I cooked it and it turned out perfectly. I also used chicken stock vice chicken broth, only because that is what I had in my pantry.

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 chicken breasts, cut into small cubes
  • 4 cloves garlic, minced
  • ¾ cup rice (I used Basmati)
  • 1 can (10 oz) cream of chicken soup
  • 2 to 3 cups chicken broth
  • 2 cups broccoli florets
  • 1 cup cheddar cheese
  • salt and pepper to taste
